Hijke is a small cheese making industry started by Hester Hoogendijk in the year 1998 with the production of soft cheeses. Hard cheeses have been produced since late 2003.
The farm Doornkraal, which is home to Hijke Cheese, is 9Ha in extent & located 20km from Johannesburg International Airport off the R25 to Bapsfontein.
Hester started farming with cows in 1997. She went on a cheese making course in 1998, worked in a cheese factory for 8 months, & has since been making cheese. She makes 20 varieties of cheese – see the Products page. The dairy part has been sold off & cheese making is now Hester’s main activity. The sale of products is direct to restaurants, deli’s, & coffee shops.
